DESCRIPTION:Join KindChef Deb to make an “Detox” Cabbage and Veggies Soup (based on this recipe from the Mediterranean Dish.) \nAfter completing your soup\, freeze and label it for donation\, then drop off at one of our participating food assistance providers\, with a person or family that is in your heart\, or anyplace that you prefer\, when convenient. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n\n“Detox” Cabbage and Veggies Soup\nIngredients: \n\n\n\n\n\n\n\n\n\n\n\n1/4 cup extra virgin olive oil\n3 medium yellow onion\, chopped\n9 garlic cloves\, minced\n3 medium (or 2 large) heads of green cabbage\, cored and chopped\n6 celery sticks\, chopped\n6 carrots\, sliced into thin rounds\nKosher salt\nBlack pepper\n1.5 teaspoon ground turmeric\n1 Tbsp ground cumin\n1 Tbsp ground coriander\n1/2 – 1 Tbsp Aleppo pepper or red pepper flakes\n3 (28-ounce) cans diced tomato\n9 cups low sodium vegetable broth\n3 cups chopped parsley leaves \n9 green onions\, trimmed and sliced\n3- inch piece fresh ginger\, peeled and finely grated\n3 large lemons\, zested and juiced\n\n\n\nSauté the aromatics. In a large Dutch oven or cooking pot with a lid\, heat the olive oil until shimmering. Add the onion and garlic and cook\, stirring regularly\, until fragrant (adjust the heat as necessary to make sure the garlic does not burn). \n\nSoften the veggies. Add the cabbage\, celery\, carrots\, and a big pinch of kosher salt and black pepper (about 1/2 to 3/4 teaspoon each). Cook\, stirring occasionally\, until the vegetables have softened somewhat\, about 5 to 7 minutes (it helps to cover the pot partway so that the cabbage will wilt easily).\nSeason. Add the turmeric\, cumin\, coriander\, and Aleppo pepper and toss to coat the vegetables with the spices.\n\nSimmer. Add the diced tomatoes (with their juices) and the broth. Bring to a boil for about 5 minutes\, then turn the heat to medium-low. Cover the pot part way allowing just a small opening at the top. Simmer for about 20 to 25 minutes or until the vegetables are tender. \n\n\n\n\nFinish and serve. Turn the heat off and stir in the parsley\, chopped green onions\, ginger\, lemon zest and lemon juice.
