SUMMARY:KindSoup for Students - Make Burst Tomato Orzo to Share With Others
DESCRIPTION:Join us online for KindSoup for Students as we make a Burst Tomato Orzo (based on this recipe from the NYT.) After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 10 quarts that can qualify for any given day (5 SSL hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\nTake a picture during preparation\, of the finished product\, and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nBurst Tomato Orzo\n\n\n\n\n1/3 cup olive oil \n3 large shallots\, chopped (about a cup)\nSalt \n1 head garlic – grated \n1 tsp crushed red pepper\, to taste\n4 ½pounds cherry tomatoes \n3 cups tightly packed fresh basil leaves\, roughly chopped\, plus 1 sprig \n1 pound orzo \n4-6 cans (or 1 1/2 lb dry – precooked) cannellini (or other white) beans\n3 quart (12 cups) low-sodium vegetable broth (more as needed)\n2 cups grated Parmesan\, plus more for serving\n3 Tablespoons unsalted butter \n1 lemon\, juiced (more to taste)\nArugula\, optional topping for serving\n\nSoup Instructions\n\n\n\nHeat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the shallots\, some salt and cook\, stirring often\, until the shallot is translucent and fragrant\, 4-5 minutes. Add the garlic and crushed red pepper and cook\, stirring constantly\, until fragrant\, another minute or so more.\nAdd the tomatoes\, basil sprig and 3 cups water and cover the pot. Increase the heat to medium-high and let cook\, covered\, until the tomatoes are very soft and easily burst when pressed with a wooden spoon or spatula\, about 10 minutes.\nUse the back of a wooden spoon or spatula to press the tomatoes against the side of the pot until all the tomatoes are broken down. Adjust the heat as needed to maintain a steady yet gentle boil.\nCover and continue to cook\, stirring occasionally\, until the tomato liquid has thickened\, slightly deepened in color and reduced by about half\,  10-12 minutes. The mixture will go from very brothy to a tomato soup-like texture.\nStir in the orzo\, broth and some salt and bring to a boil over high heat. Lower the heat to maintain a simmer and cook\, stirring every minute or two and making sure to scrape the bottom of the pot to prevent sticking\, until the orzo is tender and saucy\, 10-13 minutes more.  Add the beans and stir it around to be well blended.\nRemove the pot from the heat and discard the basil sprig. Stir in the Parmesan\, butter\, lemon juice and chopped basil until silky and evenly combined. Season to taste with salt as needed. DESCRIPTION:Join our team in preparing nutritious and delicious casseroles and/or banana bread for the individuals served by So What Else in Rockville. Kindly list all ingredients used\, when dropping off at this location.  \nWhen you sign up below\, you are committing to deliver four individual servings of a casserole or banana bread to the center August 17th – 31st Monday-Friday between 7:00a m-4:00 pm or Saturdays between 5:00am- 3:00pm. You can sign up for additional slots to bring more\, but students seeking SSL hours should note MCPS’s daily limit in the guidelines below. \nOur recipe library has wonderful casserole suggestions\, but you are welcome to deliver any type of nutritious casserole you wish to make. You can substitute zucchini bread or any other healthier type of quick bread in place of banana bread. And if you need of a recipe\, we recommend this one for mini loaves of banana bread. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nLemony White Bean Soup with Greens (optional ground Turkey)\n\n\n\nIngredients\n\n1 1/2 – 2 pounds ground turkey (optional\, leave out for vegan version)\n1/4 cup olive oil\n3 large onions\, diced\n3-4 large carrots\, diced\n2-3 bunches sturdy greens\, such as kale\, broccoli rabe\, mustard greens or collard greens\n3 tablespoons tomato paste\n2 1/4 teaspoons ground cumin\, plus more to taste\n1/3 teaspoon red-pepper flakes\, plus more to taste\n9 garlic cloves\, minced\n3 tablespoons finely grated fresh ginger\n1 tablespoon kosher salt\, plus more to taste\n3 quarts chicken stock (or vegetable broth)\n6 (15-ounce) cans white beans\, drained and rinsed\n3 cups chopped fresh\, soft herbs\, such as parsley\, mint\, dill\, basil\, tarragon\, chives or a combination\nFresh lemon juice\, to taste\n\nInstructions\n\n\nHeat a large pot over medium-high for a minute or so to warm it up. Add the oil and heat until it thins out\, about 30 seconds. Add onions and carrots\, and sauté until very soft and brown at the edges\, 7 to 10 minutes.\nMeanwhile\, rinse the greens and pull the leaves off the stems. Tear or chop into bite-size pieces and set aside.\nWhen the onions are golden\, add tomato paste\, cumin and red-pepper flakes to the pot\, and sauté until paste darkens\, about 1 minute. Add garlic\, ginger and salt and sauté.\n(Use of a turkey is optional) Add turkey\, breaking up the meat with your spoon\, until turkey is browned in spots\, 4 to 7 minutes. \nAdd stock and beans\, and bring to a simmer. Let simmer until the soup is thick and flavorful\, adding more salt if needed\, 15 to 25 minutes. If you like a thicker broth\, you can smash some of the beans with the back of the spoon to release their starch. Or leave the beans whole for a brothier soup.\nAdd the greens to the pot and simmer until they are very soft. This will take 5 to 10 minutes for most greens\, but tough collard greens might take 15 minutes. (Add a little water if the broth gets too reduced.)\nStir herbs and lemon juice into the pot\, taste and add more salt\, cumin and lemon until the broth is lively and bright-tasting. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nSweet Corn Gazpacho\n\n\n\nIngredients\n\n12 ears corn\, kernels and juices\, reserve 1 cup for garnish\n4 large yellow heirloom tomatoes\, chopped \n4 yellow pepper\, stemmed\, seeded\, and chopped\n4 cups cucumber\, peeled and chopped\n1 cup extra-virgin olive oil\n1/3 cup sherry vinegar\n2 teaspoons sea salt\, to taste\nfreshly ground black pepper\, to taste\n\nfor garnish:\n\nreserved corn kernels\nsliced cherry tomatoes\nchopped basil and/or microgreens\n\ncomments that people sent in to consider before making yours:\n\ntry roasting the corn\, tomatoes and pepper\, in advance\ncan also quickly blanch the corn before blending\nsubstitute lime juice for the vinegar\nmake it a meal by sauteing up some shrimp with Old Bay Seasoning and adding it choppied to each bowl\n\nInstructions\n\n\nIn a blender\, combine the corn\, tomato\, pepper\, cucumber\, olive oil\, sherry vinegar\, salt\, and pepper and blend until smooth.
