DESCRIPTION:Join us online for KindSoup for Students as we make a Broccoli Cheese Soup (based on this recipe from All Recipes). After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nBroccoli Cheese Soup\n\n\n\n\n1 cup butter \n2 onions\, chopped\n2 (16 ounce) packages frozen chopped broccoli\n8 (14.5 ounce) cans chicken broth\n2 (1 pound) loaves processed cheese food\, cubed\n4 cups milk\n2 tablespoons garlic powder\n1 ⅓ cups cornstarch\n2 cups water\n\nSoup Instructions\n\n\n\n\nMelt butter in a stockpot over medium heat. Add onions and cook\, stirring occasionally\, until softened. Stir in broccoli.\n\n\nAdd broth and simmer until broccoli is tender\, 10 to 15 minutes.\n\n\nReduce heat; add cheese cubes and stir until melted. Stir in milk and garlic powder.\n\n\nStir cornstarch and water together in a small bowl until smooth. Stir into soup; cook\, stirring frequently\, until thick. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nRoasted Butternut Squash Soup\n\n\n\nIngredients\n\n3 small to medium-sized Butternut Squash\n21 fl oz Coconut Milk\n3-6 Red Onions\n6 Carrots\n3-6 Bell Peppers\n3-6 heads of Garlic\n6 Tomatoes or 3 cups of Cherry Tomatoes\n4.5 cups Vegetable Broth\n3 tsp Fresh Ginger optional; grated\nOlive Oil enough to drizzle over vegetables\nFresh Cilantro for garnish\n\nSeasoning: \n\n3 tsp Black Pepper\n3 tsp Ground Cumin\n3 tsp Paprika\n3 tsp Dried Thyme\n3 tsp Dried Rosemary\n3 tsp Chili Oil\n\nInstructions\n\n\nPreheat the Oven: Set your oven to 390°F (200°C).\nPrepare the Vegetables: You can either peel and chop the butternut squash\, or\, like I do in the video\, simply cut the squash in half for roasting. Note: Halving the squash will require a longer roasting time\, while chopping the vegetables smaller will speed up the cooking process.\nSeason the Vegetables: Add the seasonings (pepper\, cumin\, paprika\, thyme\, rosemary\, and chili flakes) to the vegetables. Drizzle with olive oil and toss to coat evenly. If halving the squash\, drizzle olive oil on the exposed flesh. Cover the dish with aluminum foil.\nRoasting: Roast for about 1 1/2 hours\, or until the vegetables are golden and soft inside. If you’ve chopped the vegetables smaller\, the roasting time can be reduced. If you’ve halved the butternut squash\, expect a longer roasting time. For the last 10 minutes\, remove the aluminum foil to allow the vegetables to caramelize slightly.\nBlending: Once roasted\, scoop out the flesh of the butternut squash (if halved) and transfer all the vegetables to a blender. Add the vegetable broth and ginger (if using)\, and blend until smooth and creamy.\nCooking the Soup: Pour the blended mixture into a pot and place it on medium heat. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nCozy Autumn Wild Rice Soup\n\n\n\nIngredients\n\nbutter or olive oil for sauteing veggies \n12 cups vegetable stock (or chicken stock)\n2 cup uncooked wild rice\n16 ounces baby bella mushrooms\, sliced\n8 cloves garlic\, minced\n4 medium carrots\, diced\n4 ribs celery\, diced\n2 large (about 2 pounds) sweet potato\, peeled and diced\n2 small white onion\, peeled and diced\n2 bay leaf\n3 tablespoon Old Bay seasoning \n2 (14-ounce) cans unsweetened coconut milk (or see cream sauce option below*)\n4 large handfuls of kale\, roughly chopped with thick stems removed\nfine sea salt and freshly-cracked black pepper\n\nInstructions\n\n\nGenerously cover the bottom of your soup pot with  butter or olive oil in a large stockpot over medium-high heat.  Add onion and sauté for 5 minutes\, stirring occasionally\, until soft and translucent.  Stir in the garlic and cook for an additional 1-2 minutes\, stirring occasionally\, until fragrant.\nAdd base ingredients. DESCRIPTION:Join us online for KindSoup for Students as we make a Autumn Carrot and Sweet Potato Soup (based on this recipe from Once Upon a Chef). After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nAutumn Carrot and Sweet Potato Soup\n\n\n\n\n12 tablespoons unsalted butter\n6 medium yellow onions\, chopped\n2 tablespoon fresh ginger grinded\n3 lbs carrots\, peeled and chopped into 1-inch (2.5-cm) pieces\n4½ pounds sweet potatoes\, peeled and chopped into 1-inch (2.5-cm) pieces\n6 quarts chicken broth\n4 teaspoons salt\n1 tart yet sweet apple\, such as Honeycrisp or Fuji\, peeled and chopped\nFreshly ground black pepper\n\nSoup Instructions\n\n\n\nChop all the vegetables and get them ready before the session starts. This is the most time consuming part of the recipe.\nIn a large pot\, melt the butter over medium heat. Add the onions and cook\, stirring frequently\, until soft and translucent\, about 10 minutes. Do not brown. Add the ginger and cook a minute more.\nAdd the carrots\, sweet potatoes\, chicken broth and salt and bring to a boil. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nBasil Zucchini Soup\n\n\n\nIngredients\n\n2 2/3 cups sliced leeks (the tender white and light green parts only)\n1 to 2 Tablespoons Extra-virgin olive oil\, for drizzling\n4 garlic cloves\, chopped\n8 small zucchini\, chopped + a few strands of spiralized or julienned zucchini for garnish\n1 cup hemp seeds (can replace with Flax or Chia seeds)\njuice of 2 lemons\, more to taste\n2 Tablespoons miso paste\n4 cups water\, more as needed for consistency\n2 cups packed fresh basil\nsea salt and freshly ground black pepper\n\ngarlic croutons:\n\n8 cups cubed sourdough bread\n2 garlic cloves\, minced\nExtra-virgin olive oil\, for drizzling\n\nInstructions\n\n\nSlice the white and light green parts of the leek into rings. Rinse well\, drain\, and let dry.\nHeat olive oil in a small skillet over medium-low heat. Add the leeks and 1/4 teaspoon salt and cook until very soft\, 5 to 8 minutes. Taste one\, the leeks should be a bit translucent and should not have a bitter taste. Stir in the garlic and cook for another 30 seconds. Remove from the heat.\nIn a blender\, combine the leek mixture with the zucchini\, hemp seeds\, lemon juice\, miso\, water and a few grinds of pepper and blend until smooth. Add the basil and blend again. Taste and adjust seasonings\, adding more lemon for brightness and salt to taste. Add more water if you prefer a thinner consistency.\n\nMake the garlic croutons: \n\nPreheat the oven to 350°F and line a baking sheet with parchment paper. On the baking sheet\, toss the croutons with the garlic and a drizzle of olive oil. DESCRIPTION:Join us online for KindSoup for Students as we make a Lasagna/Shell Soup (based on this recipe from Jamie Cooks it Up). After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nLasagna/Shell Soup\n\n\n\n\n4 cloves garlic\, minced\n1 pound sausage (optional)\n6 Cups hot water\n2 Tb beef bouillon granules\n4 (14.5 ounce) cans diced Italian tomatoes\n2 (8 ounce) cans tomato sauce\n1 tsp thyme\n3 Tb brown sugar\n1 Tb Italian seasoning\n3/4 tsp salt\n1/4 tsp pepper\n3/4 tsp garlic salt\n1 tsp fennel\n1 1/2 Cups parmesan cheese\, grated\n2 (16 ounce) packages medium shell pasta OR lasagna\n2 Cups mozzarella cheese\, grated\n\nSoup Instructions\n\n\n\nInto a large soup pot place the garlic and sausage. Use a spatula to break up the sausage and cook on medium high heat until the sausage is no longer pink. Drain the fat.\nAdd all other ingredients\, except for the parmesan cheese\, mozzarella cheese and pasta shells. Bring the mixture to a boil. Reduce heat to a simmer and let it cook for 30 minutes\, stirring occasionally.\nCook the pasta in a separate pot\, according to package instructions. When your pasta has cooked pour it into a strainer in your sink and run cold water over it.\nWhen the soup has simmered for the 30 minutes\, add 1 1/2 C parmesan cheese and give it a nice stir. Remove the pan from the heat. The soup should be hot enough to melt the cheese quickly.\nAt this point (if I’m taking the soup to a party of some kind) I transfer it to a large 7 quart crock pot (without the pasta) and turn the setting to warm.\nJust before serving add the pasta. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nChickpea Soup w/ Lemon & Rosemary\n\n\n\nIngredients\n\n10 cups cooked chickpeas (7 15-oz cans or the equivalent to 105 0z in different size cans)\, peeled if possible\n1 cup olive oil\n12 cups diced onions\, about 8 onions\n16 cups water (veggie broth good too)\n4 Tbsp. minced (fresh) rosemary\, plus 4 tsp for garnish\n4 tsp. salt and to taste\nFreshly ground black pepper\n1 cup lemon juice (fresh squeezed best\, store bought hopefully fine too!)\nBest quality extra-virgin olive oil for drizzling\nRosemary sprigs for garnish\n\nInstructions\n\n\nSauté onions (lightly seasoned with salt and freshly ground black pepper) in olive oil until onions soften and start to turn golden.\nStir in peeled chickpeas\, water\, and rosemary.\nBring to a boil\, turn down heat\, and simmer for 30-40 minutes until onions are meltingly soft and flavors have melded together.\nPuree soup until smooth with stick blender\, food processor\, or blender.\nStir in lemon juice\, salt\, and the additional 4 tsp. Held on the third Thursday of each month from 12:00 PM to 3:30 PM at 6155 64th Ave\, Riverdale\, MD 20737\, this event provides toys\, kitchen items\, home supplies\, and clothing to those in need. We invite you to contribute and volunteer in one of three ways: \n\nDrop Off Donations (12:00 PM – 1:30 PM): Simply drop off your donated items at the address above.\nDonate & Set Up (12:00 PM – 1:30 PM): Bring your items and stay to help us set up and welcome participants.\nHost & Clean Up (1:30 PM – Until Cleanup is Finished Approximately 3:30 PM): Provide assistance restocking and helping our new neighbors make selections. Your help with cleaning up and making sure everything runs smoothly is invaluable. DESCRIPTION:Join our team in preparing nutritious and delicious casseroles and/or banana bread for the individuals served by So What Else in Rockville. \nWhen you sign up below\, you are committing to deliver four individual servings of a casserole or banana bread to the center any weekday between 7:00 am-4:00 pm or Saturdays between 5:00am- 3:00pm. You can sign up for additional slots to bring more\, but students seeking SSL hours should note MCPS’s daily limit in the guidelines below. \nOur recipe library has wonderful casserole suggestions\, but you are welcome to deliver any type of nutritious casserole you wish to make. You can substitute zucchini bread or any other healthier type of quick bread in place of banana bread. And if you need of a recipe\, we recommend this one for mini loaves of banana bread. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nCreamy Butternut Squash and Coconut Noodle Soup\n\n\n\nIngredients\n\n1/2 cup vegetable oil\n2 to 2 1/2 pounds peeled butternut squash\, cut into 1-inch chunks\nSalt\n1/4 cup red or yellow curry paste\n2 (3-inch) pieces ginger\, grated (about 1/3 cup)\n2 teaspoons ground turmeric\n4 (13-ounce) cans full-fat coconut milk\n4 to 6 cups vegetable or chicken stock\n4 teaspoons fish sauce or 2 tablespoon soy sauce\n1/4 cup brown sugar\n16 ounces fresh or dried egg noodles (wide or thin)\nLime wedges\, cilantro\, thinly sliced shallots and chile oil\, for serving\n\nInstructions\n\n\nBring a pot of water to a boil for the noodles. Meanwhile\, in a large pot or Dutch oven\, heat the vegetable oil over medium-high. After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Held on the third Thursday of each month from 12:00 PM to 3:30 PM at 6155 64th Ave\, Riverdale\, MD 20737\, this event provides toys\, kitchen items\, home supplies\, and clothing to those in need. We invite you to contribute and volunteer in one of three ways: \n\nDrop Off Donations (12:00 PM – 1:30 PM): Simply drop off your donated items at the given address. Whether it’s gently used toys\, kitchen supplies\, or clothing\, every donation makes a difference.\nDonate & Set Up (12:00 PM – 3:00 PM): Bring your items and stay to help us set up and welcome participants. This is a rewarding opportunity to interact with refugees and provide support personally.\nHost & Clean Up (1:00 PM – Until Cleanup is Finished): Join us without donations but lend your time and energy to organize\, host\, and wrap up the giveaway. Add the onion and cook\, stirring occasionally\, until the onion just starts to soften\, about 5 minutes.\nAdd the garlic\, carrots\, celery\, thyme\, dried chile flakes and salt. Cook until the vegetables are tender\, about 5 minutes.\nStir in the tomato paste and cook for one additional minute.\nStir in the butternut squash\, cauliflower\, beans\, gnocchi\, vegetable broth\, water and bay leaves. Bring to a boil\, then reduce to a simmer\, partially cover the saucepan and cook until the squash and cauliflower are tender\, 15 to 20 minutes.\nLet the soup cool for 10 minutes\, then blender 9 cups of the soup. Add butternut squash\, broth and salt. Bring to a boil. Lower heat\, cover and simmer until squash is tender. About 10 minutes. Working in batches\, purée squash in blender until smooth. Set aside. \nIn a large pot\, heat oil under medium heat. Add shallots\, then garlic and simmer until fragrant. Add leeks\, potatoes\, carrots\, celery\, malanga\, turnip\, scallions\, parsley. Add salt and toss. Add cabbage\, 18-21 cups vegetable broth\, habanero pepper (if using)\, and thyme. Bring to a boil\, then cover and simmer until vegetables are softened\, about 20 minutes. Add squash purée. Then noodles. Add more broth if necessary. Cook\, stirring occasionally until soup thickens slightly\, approximately 10 minutes. Remove and discard thyme sprigs and pepper. Season with salt\, pepper and lime juice. Ladle in bowls\, garnish with parsley and scallions. Serve with lime wedges and bread.\n\nNotes (from Martine\, our original JouMou chef\, with her son Olivier) \n\n I’ve listed malanga as an optional ingredient as it may be a challenge for some of you to find. Malanga\, is a starchy root vegetable that is similar in texture and appearance to taro and cassava\, but has more of a woodsy taste. After it is peeled\, it can be boiled and eaten like a potato. When added to soups\, it helps thicken the broth. It’s usually found in Latin American grocery stores and in some supermarkets.\nHabanero peppers are quite hot so add just a little or none at all if you have difficulties with spicy heat. Because there are people in my household that don’t eat spicy food\, I leave out the chile pepper when I make this soup. Instead\, I add a splash of habanero hot sauce in the individual bowls of those\, like me\, who like a dose of spicy. My hot sauce of preference is Marie Sharp’s Habanero Pepper Sauce (I have no affiliation) from Belize. I fell in love with it when I visited Belize years ago. DESCRIPTION:Join our team in preparing nutritious and delicious casseroles and/or banana bread for the individuals served by So What Else in Rockville. \nWhen you sign up below\, you are committing to deliver four individual servings of a casserole or banana bread to the center between January 1st – 15th any weekday between 7:00a m-4:00 pm or Saturdays between 5:00am- 3:00pm. You can sign up for additional slots to bring more\, but students seeking SSL hours should note MCPS’s daily limit in the guidelines below. \nOur recipe library has wonderful casserole suggestions\, but you are welcome to deliver any type of nutritious casserole you wish to make. You can substitute zucchini bread or any other healthier type of quick bread in place of banana bread. And if you need of a recipe\, we recommend this one for mini loaves of banana bread. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nAuthentic Arabic Lentil Soup\n\n\n\nIngredients\n\n\n4 cups red lentils (thoroughly washed)\n16 cups water *\n6 tsp vegetable bouillon *\n6 tsp cumin\n2 tsp black pepper\n12 tbsp olive oil divided\n4 yellow onions finely diced\nsalt to taste (¼-1/2 tsp)\n8 lemons juiced\, for serving\n\n\n\nPita chips (optional)\n\n8 pita rounds\n8 tbsp olive oil\npinch sea salt\n\n\nInstructions\n\n\nIf making pita chips\, preheat the oven to 400F. Separate pita rounds with a knife\, so that they are only one layer thick. Cut into about 1-inch squares and toss with olive oil and salt. Arrange in a single layer on a parchment-paper-lined baking sheet. Bake for 7-10 minutes\, until crispy.\nPrepare crispy\, sautéed onions. Heat 9 tablespoons of olive oil in a pan over medium-low heat. Add finely diced onions\, spread them evenly into a single layer\, and let them cook without stirring\, until the bottom becomes golden and crisp. Cook them for about 30-40 minutes\, stirring or flipping halfway\, or as needed. Remove the onions from the pan and place them on a paper-towel-lined plate to absorb excess moisture.\nWhile the onions are crisping\, add the washed red lentils\, water\, black pepper\, cumin\, and vegetable bouillon to a large pot. Bring to a boil\, and simmer on low heat for 25-35 mins\, until the lentils are tender and breaking down into the liquid.\nFor a smoother texture\, blend with an immersion blender directly in the pot. Alternatively\, transfer to a blender\, purée until smooth\, and return to the pot.**\nStir in 3 tablespoons of olive oil\, salt\, and half of the sautéed onions into the soup\, and heat through for a few more minutes to infuse flavor.\nServe with plenty of fresh lemon juice and the remaining sautéed onions sprinkled on top. Top with freshly cracked black pepper\, pita chips\, and parsley if desired. Enjoy!***\n\nNOTES: \n\n*To substitute vegetable broth\, replace the water and vegetable bouillon with 16 cups of vegetable broth\, and adjust salt to taste.\n**You can skip blending the soup for more texture.\n***For serving: Offer lemon juice or lemon halves for guests to squeeze into their soup. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nCurried Red Lentil Soup\n\n\n\nIngredients\n\n6 Tbsp. virgin coconut oil or extra-virgin olive oil\n3 medium onions\, finely chopped\n6 garlic cloves\, finely chopped\n3 (2½”) pieces fresh ginger\, peeled\, finely grated\n3 Tbsp. curry powder (such as S&B)\n¾ tsp. crushed red pepper flakes\n1½ cup red lentils\, dry\n3 (14.5-oz.) cans crushed tomatoes or equivalent\n1½ cup finely chopped cilantro\, plus leaves with tender stems for serving\nKosher salt and freshly ground black pepper\n3 (13.5-oz.) cans unsweetened coconut milk\, shaken well\nLime wedges (for serving)\n\nNOTE: 2-3 cans of 100% pumpkin (not pumpkin pie mix) can be added for extra nutrition and color value \nInstructions\n\n\nWarm virgin coconut oil or extra-virgin olive oil in a medium saucepan on the stovetop over medium heat. Cook onions\, finely chopped\, stirring often\, until softened and golden brown\, 8–10 minutes. Add garlic cloves\, finely chopped\, fresh ginger\, peeled\, finely grated\, curry powder\, and crushed red pepper flakes and cook\, stirring\, until fragrant\, about 2 minutes. Add lentils and cook\, stirring\, 1 minute. Add crushed tomatoes\, finely chopped cilantro\, a generous pinch of kosher salt\, and 7½ cups water; season with freshly ground black pepper. Set aside ¼ cup liquid from each can unsweetened coconut milk for serving; add remaining coconut milk to saucepan. Bring mixture to a boil\, then reduce heat and simmer gently\, stirring occasionally\, until lentils are soft but not mushy\, 20–25 minutes. Season soup with more salt and pepper if needed.\nTo serve\, ladle soup into bowls. Drizzle with reserved coconut milk and garnish with more cilantro. DESCRIPTION:Join our team in preparing nutritious and delicious casseroles and/or banana bread for the individuals served by So What Else in Rockville. \nWhen you sign up below\, you are committing to deliver four individual servings of a casserole or banana bread to the center  January 16th – 31st  Monday-Friday between 7:00a m-4:00 pm or Saturdays between 5:00am- 3:00pm. You can sign up for additional slots to bring more\, but students seeking SSL hours should note MCPS’s daily limit in the guidelines below. \nOur recipe library has wonderful casserole suggestions\, but you are welcome to deliver any type of nutritious casserole you wish to make. You can substitute zucchini bread or any other healthier type of quick bread in place of banana bread. And if you need of a recipe\, we recommend this one for mini loaves of banana bread.
