Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nWhite Bean and Asparagus Soup\n\n\n\nIngredients\n\n4-5 pounds asparagus\n6 large potatoes\, peeled and diced\n3 large onions\, chopped\n6 celery ribs\, chopped\n3 medium carrots\, chopped\n2 tablespoons dried parsley flakes\n3 garlic cloves\, minced\n1/3 cup olive oil\n4 quarts vegetable broth\n2 teaspoons salt\n1 1/2 teaspoons pepper\, divided\n3 bay leaves\n4-6 cans of cannellini beans (or 2 lbs dried\, pre-cooked)\n\nInstructions\n\n\nCut asparagus into 1 ½ inch pieces\, and divide in half – reserving all tips and some of the next nicest pieces to add in at the end.\nIn a Dutch oven or soup pot\, saute the potatoes\, onions\, celery\, carrots\, parsley and garlic in oil until vegetables are tender. Stir in the broth\, salt\, 3/4 teaspoon pepper\, and bay leaves. Bring to a boil. Reduce heat; add ½ the beans and ½ the asparagus stalks and simmer\, uncovered\, for 30 minutes. Discard bay leaves.\nCool slightly.\nIn a blender\, cover and puree soup in batches or use an immersion blender\, and blend until smooth. Return to the pot. Add the rest of the beans and asparagus stalks and tips\, and the remaining pepper. Bring to a boil. After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nButternut Squash & Cauliflower Soup\n\n\n\n\n2 tablespoons olive oil\n3 medium onions chopped\n9 cloves garlic minced\n6 medium carrots cut into thin half-circles\n6 medium celery stalks thinly sliced\n2 1/4 teaspoon dried thyme\n1 teaspoon dried chile flakes\n1 1/2 teaspoon kosher salt\n4 1/2 tablespoon tomato paste\n3 3/4 pound butternut squash about 4 cups\n2 1/4 pound cauliflower about 3 cups\n9 cups vegetable broth\n4 1/2 cups water \n6 bay leaves\n3/4 cup minced Italian parsley\nSalt and pepper to taste\n\nSoup Instructions\n\n\n\nHeat olive oil in a large saucepan set over medium heat.\nAdd the onions and cook\, stirring occasionally\, until the onions just start to soften\, about 5 minutes.\nAdd the garlic\, carrots\, celery\, thyme\, dried chile flakes and salt. Bring to a boil\, then reduce to a simmer\, partially cover the saucepan and cook until the squash and cauliflower are tender\, 15 to 20 minutes.\nLet the soup cool for 10 minutes\, then transfer 9 cups of the soup to a blender. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks.  \nContact Marj to Participate \n\n\nWatermelon Gazpacho\n\n\n\nIngredients\n\n\n8 fat ripe tomatoes (about 4 pounds)\, cored and cut into chunks\n8 cups seedless watermelon- chunked\, and 2 more cups- diced small\n8″ slice of day-old baguette (about 8 ounces)\, cut into pieces\n6 Kirby cucumbers\, peeled\, seeded and sliced\n1 cup chopped red onion\n4-6 garlic cloves\, minced\n2 teaspoons kosher salt (plus maybe more\, to taste)\nFreshly ground black pepper\n8 ice cubes (optional according to Melissa Clark; Keira does not recommend using ice)\n1 cup extra virgin olive oil\, and perhaps more to taste\n\nGarnish: \n\n4 cups finely diced watermelon\n4 cups finely diced cantaloupe\n4 cups diced peeled\, seeded cucumber (English or Persian also work)\n16 mint sprigs\n1 cup shaved asiago cheese OPTIONAL\n\n\nInstructions\n\n\nPut all non-garnish ingredients (EXCEPT OIL) in pot. Add 2 tsps salt and 1 tsp pepper. Puree until smooth.\nSlowly pour the olive oil into the gazpacho while blending on SLOW. Add more salt and pepper if needed. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n\n“Detox” Cabbage and Veggies Soup\nIngredients: \n\n\n\n\n\n\n\n\n\n\n\n1/4 cup extra virgin olive oil\n3 medium yellow onion\, chopped\n9 garlic cloves\, minced\n3 medium (or 2 large) heads of green cabbage\, cored and chopped\n6 celery sticks\, chopped\n6 carrots\, sliced into thin rounds\nKosher salt\nBlack pepper\n1.5 teaspoon ground turmeric\n1 Tbsp ground cumin\n1 Tbsp ground coriander\n1/2 – 1 Tbsp Aleppo pepper or red pepper flakes\n3 (28-ounce) cans diced tomato\n9 cups low sodium vegetable broth\n3 cups chopped parsley leaves \n9 green onions\, trimmed and sliced\n3- inch piece fresh ginger\, peeled and finely grated\n3 large lemons\, zested and juiced\n\n\n\nSauté the aromatics. In a large Dutch oven or cooking pot with a lid\, heat the olive oil until shimmering. Add the onion and garlic and cook\, stirring regularly\, until fragrant (adjust the heat as necessary to make sure the garlic does not burn). \n\nSoften the veggies. Add the cabbage\, celery\, carrots\, and a big pinch of kosher salt and black pepper (about 1/2 to 3/4 teaspoon each). Cook\, stirring occasionally\, until the vegetables have softened somewhat\, about 5 to 7 minutes (it helps to cover the pot partway so that the cabbage will wilt easily).\nSeason. Add the turmeric\, cumin\, coriander\, and Aleppo pepper and toss to coat the vegetables with the spices.\n\nSimmer. Add the diced tomatoes (with their juices) and the broth. Bring to a boil for about 5 minutes\, then turn the heat to medium-low. Cover the pot part way allowing just a small opening at the top. After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others. There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours. \nIn order to receive SSL Hours \n\ntake a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nLemon Orzo Chicken Soup\n\n\n\n\n2 medium yellow onions\, finely diced\n8 medium carrots\, diced into thin coins\n2 teaspoons kosher salt\n½ teaspoon ground black pepper\n6 to 8 cloves garlic\, minced\n4 teaspoons lemon zest\n16 cups reduced-sodium chicken broth\n2 cups whole-grain orzo\, or any small whole-grain pasta\n2 tablespoons corn starch + 2 tablespoons water*\n½ cup lemon juice\n6 cups cooked\, shredded chicken*\n½ to 1 cup roughly chopped fresh dill (optional)\n\n*You can use 4 tablespoons arrowroot flour instead of cornstarch. Mix it with 4 tablespoons water to dissolve before adding to soup.\n**You can use rotisserie chicken or any leftover cooked chicken and shred by hand. \nSoup Instructions\n\n\n\nLiberally coat a large pot with olive oil spray and warm over medium heat. Add onions\, carrots\, salt\, and black pepper and cook\, stirring occasionally\, 7 to 9 minutes\, until veggies are softened. Add garlic and lemon zest and cook 1 minute. Stir often to prevent the garlic from burning.\nAdd chicken broth to the pot\, increase heat to high\, and bring soup to a boil. Add orzo\, reduce heat to a simmer and continue to cook\, stirring occasionally to prevent the orzo from sticking to the bottom of the pot\, for about 6 minutes or until orzo reaches al dente. Meanwhile\, make the cornstarch slurry by adding the cornstarch and water to a small bowl\, and whisking until smooth. Set aside until ready to use.\nOnce orzo is cooked\, add shredded chicken\, lemon juice\, and cornstarch slurry to the pot and mix everything together. Simmer 10 to 15 minutes to allow soup to thicken. Add additional salt\, pepper and fresh dill\, if desired\, and serve piping hot.\n\nNote: It will last a few days in the fridge or you can stash in the freezer for a few months. It will thicken in the freezer\, but should thin out when heating. We invite you to contribute and volunteer in one of three ways: \n\nDrop Off Donations (12:00 PM – 1:30 PM): Simply drop off your donated items at the given address. Whether it’s gently used toys\, kitchen supplies\, or clothing\, every donation makes a difference.\nDonate & Set Up (12:00 PM – 3:00 PM): Bring your items and stay to help us set up and welcome participants. DESCRIPTION:Join KindChef Leni to make a Turkish Style Lentil Soup (based on this recipe from MonamiFood.) \nAfter completing your soup\, freeze and label it for donation\, then drop off at one of our participating food assistance providers\, with a person or family that is in your heart\, or anyplace that you prefer\, when convenient. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nTurkish Style Lentil Soup\n\n\n\nIngredients\n\n4 cups split red lentils\n12 cups water\n6 tablespoons Penzeys Turkish Seasoning (or make your own Turkish seasoning — See recipe below)\nExtra virgin olive oil\, to taste\n\nOptional \n\nSpring mix\, baby spinach or frozen chopped spinach\nCanned chickpeas\nFresh squeezed lemon juice or lemon wedges\nFresh chopped cilantro or parsley\nPenzeys Resist! spice mix\, to taste\, if desired\n\nInstructions\n\n\nInspect the lentils. Put the lentils into a strainer\, and put the strainer into a bowl. Carefully inspect the lentils\, and if you see foreign matter\, remove it.\nClean the lentils. Run water over the lentils in the strainer inside the bowl. Swish the lentils around in the water. Pour off the cloudy water. After doing this three or four times\, the water will run almost clear. Let the excess water drain from the lentils.\nCook the lentils. Follow the package directions for cooking. Or use these basic directions for split red lentils: In a medium size pot\, heat the water to boiling. Add the lentils to the pot. Bring the water to a boil and then reduce the heat to a moderate simmer. Cover the pot with the lid\, leaving it little bit ajar. Simmer for 6 – 12 minutes\, until the lentils look and taste cooked to you. I consider split red lentils done when I can the little dot (germ) of the lentil is still somewhat visible. Then I take the pot off the heat and let it sit to finish cooking. This keeps the lentils from turning into a mush.\nAdd the Turkish Seasoning. When the lentils are cooked\, mix in Penzeys Turkish Seasoning. This recipe calls for 6 tablespoons of Turkish Seasoning. But I add about half of the amount and then taste as I got. If you store the soup in the fridge or freezer\, it will probably need more seasoning. So when I give this soup to friends\, I add a little baggie with some extra Penzeys Turkish seasoning.\nDrizzle extra virgin olive oil over each bowl of soup or mix it into the soup. The olive oil adds great flavor and lots of good-for-you polyphenols\, too! Note: If you are making a large quantity to donate to a shelter\, mix the olive oil into the soup.\n\nOptional \n\nSpinach (fresh or frozen) or spring mix (fresh): Add a heap of baby spinach or spring mix to a microwaveable container. Cover the container with a lid that allows steam to escape. Place the container with the spinach/spring mix into your microwave. Microwave on high for 30 seconds to 1 minute\, or until the greens are wilted. Use a scissors to cut the the greens into smaller pieces and then add them to your soup. For frozen spinach\, microwave for less than the minimum amount of time given on the bag of frozen spinach.\nCooked/canned chickpeas: Great for adding texture and more protein and fiber. My favorite chickpeas are the Jovial Organic Chick Peas. They come in jars. I like add the cooking liquid from these chickpeas to my soup.\nFresh-squeezed lemon juice adds a nice tang. Be careful not to add too much. You can always add more at the table.\nCilantro or parsley. Nice as a garnish.\nPenzeys Resist! spice mix. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks.  \nContact Marj to Participate \n\n\nCorn & Spinach Soup\n\n\n\nIngredients\n\n6 ears or 4 cans (drained) corn\n1 Tbsp canola oil\n2 large onions\, diced\n2 leeks\, halved and thinly sliced\n4 carrots\, diced\n3 large potatoes\, diced\n10 cups water or vegetable broth\n10 oz spinach leaves\, chopped\n1 small can Ro-tel (or other brand) diced tomatoes & chilies (for less spicy soup use 1 can diced tomatoes instead)\nSalt and pepper\n\n*If using fresh corn: Cut kernels from cob without cutting all the way to the cob. Using the back of a knife\, scrape cobs to extract milky liquid\, reserve. \nInstructions\n\n\nHeat oil on medium. Add onion\, leeks\, and pinch of salt. Cook 5 mins\, stirring frequently.\nAdd carrots\, potatoes\, and water/broth. Bring to a boil.\nStir in corn (and corn liquid). DESCRIPTION:Help create a home for a newly resettling Afghan family of three: mom\, dad\, and a 19-year-old with a medical condition (down-syndrome) has just moved to Bethesda\, Maryland. Let’s extend a warm welcome to them by transforming their apartment into a cozy and welcoming home! Your willingness to assist is deeply appreciated by this family. \nWhile the family has some essentials (furnitures)\, they still need additional items to make their new home complete. We kindly ask that items be dropped off directly with the family as soon as possible. You can contact Mom directly by text to arrange a convenient time to meet them. We hope you’ll participate in this wonderful opportunity to meet the family and welcome them to our community! \nIf you prefer\, you can also order items to be sent directly to the family’s address. Upon signing up to contribute\, you will receive Mom’s name\, contact information\, and address. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nLentil Tomato Soup\n\n\n\nIngredients\n\n3/4 cup unsalted butter\n5 ⅓ cups heavy cream\n8 medium shallots\, finely chopped\n4 (28-ounce) cans whole tomatoes\n4 (15-ounce) cans lentils\, rinsed\n8 cups of water\nSalt\n\nInstructions\n\n\nIn a medium pot over medium heat\, melt the butter. Carefully add 4 cups heavy cream and bring to a boil over medium-high. Reduce the temperature to medium and simmer\, occasionally stirring for 5 minutes\, until the cream thickens\, reduces to about a third of its initial volume\, and resembles melted cheese while developing brown bits around the pot.\nAdd the shallots and continue stirring for 4 to 5 minutes\, until there’s very little cream at the bottom and caramelized brown bits all around the sides of the pot.\nAdd the tomatoes and their juices\, crushing them with your hands as you add them to the pot\, or crush them inside the pot\, using a potato masher. Add the lentils\, 8 cups of water and a big pinch of salt to season all the liquid. Scrape the brown bits off the bottom and sides of the pot into the liquid\, using a wooden spoon or spatula.\nBring to a boil over medium-high. DESCRIPTION:Join KindChef Denise to make an Asparagus and White Bean Soup (based on this recipe from Taste of Home.) \nAfter completing your soup\, freeze and label it for donation\, then drop off at one of our participating food assistance providers\, with a person or family that is in your heart\, or anyplace that you prefer\, when convenient. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n\nAsparagus and White Bean Soup\n\n\n\nIngredients\n\n6 pounds thin fresh asparagus\n6 large potatoes\, peeled and diced\n3 large onions\, chopped\n6 celery ribs\, chopped\n3 medium carrots\, chopped\n2 tablespoons dried parsley flakes\n3 garlic cloves\, minced\n1/3 cup canola oil\n6 cans (14-1/2 ounces each) chicken broth\n2 teaspoons salt\n1 1/2 teaspoons pepper\, divided\n3 bay leaves\n2-3 cans of cannellini beans or 6 cups cubed cooked chicken (alternatively\, you can use a combination of both)\n6 cups half-and-half cream or milk\nShaved Parmesan cheese\, optional\n\nInstructions\n\n\nCut tips from asparagus spears; set aside. Place stalks in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Strain\, reserving 12 cups cooking liquid. Discard stalks.\nIn a Dutch oven\, saute the potatoes\, onions\, celery\, carrots\, parsley and garlic in oil until vegetables are tender. Stir in the broth\, salt\, 3/4 teaspoon pepper\, bay leaf and reserved cooking liquid. Bring to a boil. Reduce heat; simmer\, uncovered\, for 30 minutes. Discard bay leaf. Cool slightly.\nIn a blender\, cover and puree soup in batches until smooth. Return to the pan. Add the beans\, chicken (if using)\, cream (or milk)\, remaining pepper and reserved asparagus tips. Bring to a boil. Reduce heat; simmer\, uncovered\, for 5 minutes or until asparagus is tender.
