Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nSweet Corn Gazpacho\n\n\n\nIngredients\n\n\n12 ears corn\, kernels and juices\, reserve 1 cup for garnish\n4 large yellow heirloom tomatoes\, chopped \n4 yellow pepper\, stemmed\, seeded\, and chopped\n4 cups cucumber\, peeled and chopped\n1 cup extra-virgin olive oil\n1/3 cup sherry vinegar\n2 teaspoons sea salt\, to taste\nfreshly ground black pepper\, to taste\n\nfor garnish:\n\nreserved corn kernels\nsliced cherry tomatoes\nchopped basil and/or microgreens\n\ncomments that people sent in to consider before making yours:\n\ntry roasting the corn\, tomatoes and pepper\, in advance\ncan also quickly blanch the corn before blending\nsubstitute lime juice for the vinegar\nmake it a meal by sauteing up some shrimp with Old Bay Seasoning and adding it choppied to each bowl\n\n\nInstructions\n\n\nIn a blender\, combine the corn\, tomato\, pepper\, cucumber\, olive oil\, sherry vinegar\, salt\, and pepper and blend until smooth. SUMMARY:Clean Up Along Wisteria Drive
DESCRIPTION:Join forces with other volunteers to clean up Wisteria Drive in Germantown\, one of the area roads KindWorks has “adopted.” We will be picking up litter and recyclables along Wisteria between Germantown Road and Great Seneca Highway.  \n \nSo grab a friend or two and join us to have fun and enjoy the fresh air while helping the environment! Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nRed Curry Lemongrass Soup\n\n\n\nIngredients\n\n3 stalk lemongrass\, outer part removed\n15 cups vegetable broth\n6-inch piece of fresh ginger\, cut into chunks\n1/3 cup tamari\, more to taste\nscant 1/3 cup cane sugar\nJuice and zest of 6 limes (about 1 cup juice)\n3 tablespoons coconut oil\n3 medium onions\, diced\n12 cups shiitake mushrooms\, de-stemmed and sliced* (see note)\n1 ½ – 3 tablespoons red curry paste\, more to taste\n3 medium tomatoes\, diced\n15 to 18 cups chopped baby bok choy (6 medium bunches)\nSea salt\nCooked jasmine rice\, for serving\nOptional: 3 cups full-fat coconut milk\, for a creamier soup\nOptional: baked tofu or cooked protein of your choice\n\nInstructions\n\n\nUsing the back of a chef’s knife\, bash the lemongrass which will help release it’s flavor. Slice them in half .\nIn a large pot\, combine the broth\, lemongrass\, ginger\, tamari\, sugar\, lime juice\, and lime zest\, and simmer for about 15 minutes. Strain the broth over a medium bowl\, discard the lemongrass and ginger pieces\, and set the broth aside.\nReturn the pot to the stove and heat the coconut oil over medium heat. Add the onions and cook until translucent and soft\, about 5 minutes. Stir in the mushrooms and a pinch of salt. Stir and cook until the mushrooms are soft\, about 15 minutes. Stir in the curry paste until well incorporated\, then stir in the tomatoes.\nAdd the reserved broth and simmer for 5 minutes\, then add the bok choy. Simmer until the bok choy is tender but still vibrant green\, 5 to 7 minutes.\nTake out the lemon grass\, taste and adjust seasonings\, adding more tamari or lime juice if desired. If you would like more spice\, add more red curry. If it’s too tangy\, salty and/or spicy\, add the coconut milk. After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\n\n\nWatermelon Gazpacho\n\n\n\n\n8 fat ripe tomatoes (about 4 pounds)\, cored and cut into chunks\n8 cups seedless watermelon- chunked\, and 2 more cups- diced small\n8″ slice of day-old baguette (about 8 ounces)\, cut into pieces\n6 Kirby cucumbers\, peeled\, seeded and sliced\n1 cup chopped red onion\n4-6 garlic cloves\, minced\n2 teaspoons kosher salt (plus maybe more\, to taste)\nFreshly ground black pepper\n8 ice cubes (optional)\n1 cup extra virgin olive oil\, and perhaps more to taste\n\nFor serving: \n\navocado\, peeled and diced small\n\nInstructions\n\n\n\nIn a blender\, large bowl or pot\, combine tomatoes\, 8 cups watermelon\, bread\, cucumber\, onion\, garlic\, salt\, pepper and ice cubes. Purée until desired texture. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nGreek Lemon Chicken and Gnocchi Soup\n\n\n\nIngredients\n\n6 quarts chicken stock\n9 cups torn rotisserie chicken (or other cooked chicken)\n9 medium lemons\nSalt and black pepper\, to taste\n3 pounds shelf-stable or refrigerated gnocchi\n6 eggs (well beaten)\n12 garlic cloves\, grated\nFresh dill (optional)\, for garnish\n\nInstructions\n\n\nTo a large pot over high\, add the chicken stock\, torn chicken and grated lemon zest (from about 3 lemons). Add a 1/4 teaspoon of salt (remember\, you are seasoning a lot of liquid!) and a 1/2 teaspoon of black pepper and bring to a boil over high. Reduce the heat to medium and simmer for 2 minutes.\nAdd the gnocchi to the soup and continue simmering for 3 minutes.\nMeanwhile\, squeeze enough lemon juice into a heatproof liquid measuring cup to get 1 ½ cups juice. Add the well beaten eggs and the garlic to the juice and whisk well to combine.\nWhile constantly whisking\, slowly stream 2 cups of the simmering chicken stock into the egg mixture to temper the eggs. Add the tempered egg mixture to the pot all at once and stir to combine. Turn the heat off right after incorporating the eggs.
