DESCRIPTION:Help create a home for a newly resettling Afghan family of three: mom\, dad\, and a 19-year-old with a medical condition (down-syndrome) has just moved to Bethesda\, Maryland. Let’s extend a warm welcome to them by transforming their apartment into a cozy and welcoming home! Your willingness to assist is deeply appreciated by this family. \nWhile the family has some essentials (furnitures)\, they still need additional items to make their new home complete. We kindly ask that items be dropped off directly with the family as soon as possible. You can contact Mom directly by text to arrange a convenient time to meet them. We hope you’ll participate in this wonderful opportunity to meet the family and welcome them to our community! \nIf you prefer\, you can also order items to be sent directly to the family’s address. Upon signing up to contribute\, you will receive Mom’s name\, contact information\, and address. Please inform him of any packages you send so he can be on the lookout for them. \nThank you for your generosity and support in helping this family settle into their new home! \nDonation Guidelines\nFurniture must be in very good condition\, with no chips\, tears\, or stains. SUMMARY:Make Lentil Tomato Soup to Share With Others
DESCRIPTION:Join KindChef Deb to make a Lentil Tomato Soup (based on this recipe from the New York Times.) After completing your soup\, freeze and label it for donation\, then drop off at one of our participating food assistance providers\, with a person or family that is in your heart\, or anyplace that you prefer\, when convenient. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nLentil Tomato Soup\n\n\n\nIngredients\n\n3/4 cup unsalted butter\n5 ⅓ cups heavy cream\n8 medium shallots\, finely chopped\n4 (28-ounce) cans whole tomatoes\n4 (15-ounce) cans lentils\, rinsed\n8 cups of water\nSalt\n\nInstructions\n\n\nIn a medium pot over medium heat\, melt the butter. Carefully add 4 cups heavy cream and bring to a boil over medium-high. Reduce the temperature to medium and simmer\, occasionally stirring for 5 minutes\, until the cream thickens\, reduces to about a third of its initial volume\, and resembles melted cheese while developing brown bits around the pot.\nAdd the shallots and continue stirring for 4 to 5 minutes\, until there’s very little cream at the bottom and caramelized brown bits all around the sides of the pot.\nAdd the tomatoes and their juices\, crushing them with your hands as you add them to the pot\, or crush them inside the pot\, using a potato masher. Add the lentils\, 8 cups of water and a big pinch of salt to season all the liquid. Scrape the brown bits off the bottom and sides of the pot into the liquid\, using a wooden spoon or spatula.\nBring to a boil over medium-high. Partly cover the pot with a lid and boil\, stirring occasionally\, for 15 minutes. Most recipes render at least 6 quarts of soup\, 3 SSL hours. \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nLemony Carrot and Cauliflower Soup\n\n\n\n\n\nIngredients\n\n1/4 cup coriander seeds\n1/3 cup extra-virgin olive oil\, more for serving\n4 large white onions\, peeled and diced (8 cups)\n18 cups water\n8 large garlic cloves\, finely chopped\n20 medium carrots (4 pounds)\, peeled and cut into ½-inch pieces (8 cups)\n2 tablespoons kosher salt\, more as needed\n3/4 cup white miso\n4 small heads (or 2 large heads) of cauliflower\, trimmed and cut into florets\n2 teaspoons lemon zest\n1/2 cup lemon juice\, more to taste\nSmoky chile powder\, for serving\nCoarse sea salt\, for serving\nCilantro leaves\, for serving\n\nSoup Instructions\n\nIn a large\, dry pot over medium heat\, toast coriander seeds until fragrant and dark golden-brown\, 2 to 3 minutes. Transfer to a mortar and pestle and coarsely crush.\nReturn the pot to medium heat. Add the oil and heat until warm. Stir in onions; cook\, stirring occasionally\, until soft and lightly colored\, 7 to 10 minutes. Stir in garlic and cook 1 minute.\nAdd carrots\, crushed coriander\, salt and 18 cups water to the pot. Stir in the miso until it dissolves. Bring mixture to a simmer and cook\, uncovered\, 5 minutes. Stir in cauliflower and cook\, covered\, over medium-low heat until the vegetables are very tender\, about 10 minutes.\nRemove the soup from the heat. Using an immersion blender\, purée the soup until smooth. (Alternatively\, you can let soup cool slightly then purée it in batches in a food processor or blender.) If necessary\, return the puréed soup to the heat to warm through. Stir in the lemon zest and juice just before serving. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n\nAsparagus and White Bean Soup\n\n\n\nIngredients\n\n6 pounds thin fresh asparagus\n6 large potatoes\, peeled and diced\n3 large onions\, chopped\n6 celery ribs\, chopped\n3 medium carrots\, chopped\n2 tablespoons dried parsley flakes\n3 garlic cloves\, minced\n1/3 cup canola oil\n6 cans (14-1/2 ounces each) chicken broth\n2 teaspoons salt\n1 1/2 teaspoons pepper\, divided\n3 bay leaves\n2-3 cans of cannellini beans or 6 cups cubed cooked chicken (alternatively\, you can use a combination of both)\n6 cups half-and-half cream or milk\nShaved Parmesan cheese\, optional\n\nInstructions\n\n\nCut tips from asparagus spears; set aside. Place stalks in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Strain\, reserving 12 cups cooking liquid. Discard stalks.\nIn a Dutch oven\, saute the potatoes\, onions\, celery\, carrots\, parsley and garlic in oil until vegetables are tender. Stir in the broth\, salt\, 3/4 teaspoon pepper\, bay leaf and reserved cooking liquid. Bring to a boil. Reduce heat; simmer\, uncovered\, for 30 minutes. Discard bay leaf. Cool slightly.\nIn a blender\, cover and puree soup in batches until smooth. Return to the pan. Add the beans\, chicken (if using)\, cream (or milk)\, remaining pepper and reserved asparagus tips. Bring to a boil. Reduce heat; simmer\, uncovered\, for 5 minutes or until asparagus is tender.
