SUMMARY:KindSoup for Students - Make Ezogelin Soup to Share With Others
DESCRIPTION:Join us online for KindSoup for Students as we make a Ezogelin Soup. After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 10 quarts that can qualify for any given day (5 SSL hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\nTake a picture during preparation\, of the finished product\, and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nEzogelin Soup\n\n\n\n\n4 tbs butter \n8 tbs olive oil\n4 medium-sized onions\, roughly chopped\n4 medium-sized potatoes\, roughly chopped\n4 carrots\, roughly chopped \n4 tbs tomato paste\n4 tbs red pepper paste (if you don’t have it\, add more tomato paste)\n4 cups red lentils\, washed and rinsed\n2 cups chicken stock \n5 quarts of hot water\n1lb (2.5 cups) bulgur\, medium or coarsely ground\, is better\, but all would work great\n4 teaspoons salt\n4 teaspoons paprika\n4 teaspoons black pepper\n12 teaspoons dry mint\nAdd lemon juice to taste when serving\n\nSoup Instructions\n\n\n\nHeat pot on high heat\, melt the butter and olive oil. Add the onion\, potato and carrot when the oil is hot. Cook\, stirring often for 5-6 mins. Add the tomato and pepper paste and stir for a minute.\nAdd the lentil and pour the chicken stock and 6 quarts of water. Bring to boil and simmer for 20 minutes.\nAfter all ingredients are cooked (when the lentil and vegetables are soft) blend the soup with an immersion blender until it is smooth.\nAdd bulgur\, salt\, paprika\, black pepper\, dry mint\, and the remaining water (about 2 quarts) into the pot. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nBasil Zucchini Soup\n\n\n\nIngredients\n\n\n2 2/3 cups sliced leeks (the tender white and light green parts only)\n1 to 2 Tablespoons Extra-virgin olive oil\, for drizzling\n4 garlic cloves\, chopped\n8 small zucchini\, chopped + a few strands of spiralized or julienned zucchini for garnish\n1 cup hemp seeds (can replace with Flax or Chia seeds)\njuice of 2 lemons\, more to taste\n2 Tablespoons miso paste\n4 cups water\, more as needed for consistency\n2 cups packed fresh basil\nsea salt and freshly ground black pepper\n\ngarlic croutons:\n\n8 cups cubed sourdough bread\n2 garlic cloves\, minced\nExtra-virgin olive oil\, for drizzling\n\nInstructions\n\n\n\nSlice the white and light green parts of the leek into rings. Rinse well\, drain\, and let dry.\nHeat olive oil in a small skillet over medium-low heat. Add the leeks and 1/4 teaspoon salt and cook until very soft\, 5 to 8 minutes. Taste one\, the leeks should be a bit translucent and should not have a bitter taste. Stir in the garlic and cook for another 30 seconds. Remove from the heat.\nIn a blender\, combine the leek mixture with the zucchini\, hemp seeds\, lemon juice\, miso\, water and a few grinds of pepper and blend until smooth. Add the basil and blend again. Taste and adjust seasonings\, adding more lemon for brightness and salt to taste. Add more water if you prefer a thinner consistency.\n\nMake the garlic croutons: \n\nPreheat the oven to 350°F and line a baking sheet with parchment paper. On the baking sheet\, toss the croutons with the garlic and a drizzle of olive oil. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n(Spicy) Corn and Coconut Soup\n\n\n\nIngredients\n\n15 ears yellow or bicolor corn (or 15 cups frozen corn kernels)\n6 tablespoons olive oil\n6 shallots\, thinly sliced into rings\n9 garlic cloves\, minced\n3 (1-inch) pieces ginger\, peeled and minced\n3 serrano chiles (or other chile)\, minced\n6 small red potatoes (6 to 8 ounces total)\, cut into ½-inch cubes\n7 ½ cups vegetable broth (or 7 ½ cups of hot water whisked with 4 ½ teaspoons jarred bouillon)\n3 (15-ounce) can full-fat coconut milk\n3 tablespoons lime juice (from 2 limes)\nKosher salt\, to season\nTorn cilantro leaves\, toasted coconut flakes\, chopped roasted peanuts\, crispy fried shallots\, lime wedges and more sliced Serrano chiles\, to serve (optional)\n\nInstructions\n\n\nCut the corn kernels off the cobs and transfer to a bowl. Using the back of a butter knife\, scrape the cobs so that all of the milky juices collect in the bowl and the cobs look completely dry\, like wrung-out sponges. Set aside. (If using frozen kernels\, skip this step.)\nIn a large stockpot over medium heat\, heat olive oil. Add shallots\, garlic\, ginger and chile\, and sauté\, stirring occasionally\, until soft and fragrant\, 3 to 5 minutes. Add corn kernels and juices to the pot\, and sauté until the corn is softer and brighter\, about 3 minutes more.\nAdd potato pieces\, and stir to coat\, 1 to 2 minutes.\nNow\, pour in the vegetable broth and coconut milk. Bring to a boil\, reduce to a simmer\, cover\, and cook for 8 to 10 minutes\, until the potatoes are tender all the way through.\nUse an immersion blender to roughly purée the soup\, so that it’s creamy with some kernels of corn\, chunks of potato\, and chile flecks remaining. (Alternatively\, ladle about half of the soup into a blender\, blend until smooth\, and return to the pot.) Season with lime juice and salt\, and mix to combine.
