DESCRIPTION:Join KindChef Deb online for KindSoup for Students as we make a Butternut Squash & Cauliflower Soup (based on this recipe from Cookin Canuck). After completing your soup\, and sharing some with your family\, freeze and label the rest for donation\, then drop off at one of our participating food assistance providers. \nStudents can earn 1 Student Service Learning Hour for every 2 quarts of frozen soup made with the group and delivered to others.  There is a maximum of 8 quarts that can qualify for any given day (4 hours). Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nButternut Squash & Cauliflower Soup\n\n\n\n\n2 tablespoons olive oil\n3 medium onions chopped\n9 cloves garlic minced\n6 medium carrots cut into thin half-circles\n6 medium celery stalks thinly sliced\n2 1/4 teaspoon dried thyme\n1 teaspoon dried chile flakes\n1 1/2 teaspoon kosher salt\n4 1/2 tablespoon tomato paste\n3 3/4 pound butternut squash about 4 cups\n2 1/4 pound cauliflower about 3 cups\n9 cups vegetable broth\n4 1/2 cups water \n6 bay leaves\n3/4 cup minced Italian parsley\nSalt and pepper to taste\n\nSoup Instructions\n\n\n\nHeat olive oil in a large saucepan set over medium heat.\nAdd the onions and cook\, stirring occasionally\, until the onions just start to soften\, about 5 minutes.\nAdd the garlic\, carrots\, celery\, thyme\, dried chile flakes and salt. Cook until the vegetables are tender\, about 5 minutes.\nStir in the tomato paste and cook for one additional minute. \nStir in the butternut squash\, cauliflower\, vegetable broth\, water and bay leaves. Bring to a boil\, then reduce to a simmer\, partially cover the saucepan and cook until the squash and cauliflower are tender\, 15 to 20 minutes.\nLet the soup cool for 10 minutes\, then transfer 9 cups of the soup to a blender. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nWhite Bean and Asparagus Soup\n\n\n\nIngredients\n\n4-5 pounds asparagus\n6 large potatoes\, peeled and diced\n3 large onions\, chopped\n6 celery ribs\, chopped\n3 medium carrots\, chopped\n2 tablespoons dried parsley flakes\n3 garlic cloves\, minced\n1/3 cup olive oil\n4 quarts vegetable broth\n2 teaspoons salt\n1 1/2 teaspoons pepper\, divided\n3 bay leaves\n4-6 cans of cannellini beans (or 2 lbs dried\, pre-cooked)\n\nInstructions\n\n\nCut asparagus into 1 ½ inch pieces\, and divide in half – reserving all tips and some of the next nicest pieces to add in at the end.\nIn a Dutch oven or soup pot\, saute the potatoes\, onions\, celery\, carrots\, parsley and garlic in oil until vegetables are tender. Stir in the broth\, salt\, 3/4 teaspoon pepper\, and bay leaves. Bring to a boil. Reduce heat; add ½ the beans and ½ the asparagus stalks and simmer\, uncovered\, for 30 minutes. Discard bay leaves.\nCool slightly.\nIn a blender\, cover and puree soup in batches or use an immersion blender\, and blend until smooth. Return to the pot. Add the rest of the beans and asparagus stalks and tips\, and the remaining pepper. Bring to a boil. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks.  \nContact Marj to Participate \n\n\nCorn Chowder\n\n\n\nIngredients\n\n6 cans corn (48 ozs or more frozen)\, drained\n6 large red potatoes peeled and quartered (or not peeled!)\n3 Tbsps canola oil\n3 large white onion\n15 cloves large garlic minced\n8 large carrots\, peeled and diced\n3 large red bell peppers\, cored and chopped\n1½ tsps salt (or more to taste)\n2 Tbsps Cajun or Old Bay seasoning\, optional\n1-1/2 tsps paprika\, optional (careful with quantity if using Old Bay)\n1 tsp ground cumin\n2 cans full fat coconut milk\n6 cups water or vegetable broth\nPepper to taste\n\nInstructions\n\n\nPlace potatoes in quarters into pot of boiling water. Cook 10-15 mins\, until soft.\nHeat oil on medium in soup pot. Sauté onion and garlic\, stirring occasionally\, 5-8 mins. \nAdd bell pepper\, carrots\, and seasonings. Cook\, stirring occasionally\, 5-8 mins.\nPlace HALF of the corn and HALF of the cooked potatoes in a separate pot. Add coconut milk and water (or broth). Blend until completely smooth.\nChop the remaining potato into smaller chunks. Add potato chunks and remaining corn to the sautéed vegetables. Pour the blended corn/potato mixture into the pot. Bring to a gentle boil.\nSimmer 10-20 mins.\nRemove from heat. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nCreamy Vegan Mushroom Soup\n\n\n\nIngredients\n\n1/3 cup olive oil\, vegan butter\, or 3/4 cup water\n3 large onions\, diced\n12 cloves garlic\, minced\n6 lbs. mushrooms (cremini or white)\, sliced\n1 1/2 cup vegan dry white wine (red ok too)\, optional\n3 tablespoons fresh thyme or 4 1/2 teaspoon dried\n12 cups vegetable broth\n1/2 cup organic cornstarch or arrowroot (+ 3/4 cup water)\, optional\n3 cans (14oz.) coconut milk (light or full-fat) or 4 1/2 cups vegan cream or unsweetened cashew milk\, *see notes\nmineral salt & pepper\, to taste\n3/4 cup chopped parsley\n\n\n*To keep this recipe low fat\, use unsweetened plant milk of choice\, make sure it’s at room temp so the soup can heat back up quickly. You may definitely want to use the cornstarch to add body and volume if not using coconut milk. \n\nInstructions\n\n\nSaute: In a large pot\, heat oil or water over medium heat\, saute the onions and garlic for 5 minutes. Add the mushrooms\, thyme and wine\, cook for 5 minutes.\nSimmer: Add the broth\, bring to a boil\, cover\, reduce heat and simmer for 15 minutes. In the last five minutes\, add the coconut or plant milk\, continue cooking for five minutes.\nSlurry: Mix the cornstarch with cool water. Add to the soup and stir frequently for 1 – 2 minutes until soup slightly thickens. If the soup is too thin\, add more cornstarch slurry as needed until desired consistency is reached.\nRemove from heat and stir in the parsley. Most recipes render at least 6 quarts of soup\, 3 SSL hours.  \nIn order to receive SSL Hours \n\n take a picture during preparation and at delivery\nreport on where you shared your KindSoup \nComplete this SSL Form  \n\nConnect to Zoom event \n\n\nGolden Potato and Greens Soup\n\n\n\n\n1/2 cup extra-virgin olive oil\, plus more for garnishing\n6 medium leeks (white and green parts)\, finely chopped\n12 garlic cloves\, thinly sliced\n6 pounds baby Yukon Gold potatoes\, sliced into rounds (about ¼-inch thick)\n1 Tbsp ground turmeric (or more to taste)\n1 tsp red pepper flakes – more to taste\nSalt and black pepper\n3 bunches Swiss chard\, kale or mature spinach\, stems removed\, coarsely chopped\nCoarsely chopped dill\, for garnishing\noptional: can or 2 of coconut milk\n\nSoup Instructions\n\n\n\nHeat oil in a large pot over medium-high. Add the leeks and garlic and cook\, stirring occasionally\, until the leeks have softened but have not browned\, 4 to 6 minutes. Add the potatoes\, turmeric and red pepper flakes and season with salt and pepper. Using a wooden spoon\, give the potatoes and leeks a good stir to coat them with the spices.\nPour 15 cups of water into the pot\, season with more salt and bring to a simmer. Cook\, stirring occasionally\, until the potatoes are very soft and nearly falling apart\, 25 to 30 minutes. Use the spoon to mash down a few of the potatoes to help them release their starch\, which will thicken the soup and make it even more creamy. Throw in the Swiss chard and simmer until just wilted\, 2 to 3 minutes. Taste and add more salt\, if needed.\nLadle the soup into bowls. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\n(Spicy) Miso Lentil Soup\n\n\n\nIngredients\n\n4 cups green or brown lentils\n3 cups long-grain white rice (or orzo or brown rice)\nSalt (to taste\, scaled up as needed during cooking)\n4 (5-ounce) packages fresh baby spinach (about 24 cups\, not packed)\n10 tablespoons white miso\n4 inches fresh ginger\, unpeeled and thinly sliced\n4 to 8 serrano or jalapeño chiles\, destemmed and halved (depending on heat preference)\n4 limes\, halved\n1/4 cup toasted sesame oil\, plus more for serving\n16 ounces (1 pound) shiitake mushrooms\, destemmed and thinly sliced\n24 cups water\n\nInstructions\n\n\nIn a medium or large pot\, saute the mushrooms in oil with 1/4 teaspoon salt over medium heat ntil the mushrooms are browned\, 7 to 9 minutes. Set aside. \nIn the same pot\, bring 24 cups of water\, the lentils\, rice and 1/4 teaspoon salt to a boil over high. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nStuffed Cabbage Roll Soup\n\n\n\nIngredients\n\n1/3 cup butter divided\n2 large yellow onions diced\n6 cloves garlic minced\n2 – 3 pounds ground beef (or ground turkey\, skip for vegetarian option)\n8 cups roughly chopped green cabbage (about 2 small head or 1 large head)\n1/2 cup chopped fresh parsley\n2 teaspoons dried oregano (or 2 tablespoon fresh)\n4 teaspoons dried mint (or 4 tablespoons fresh\, can be omitted if you don’t have any)\n1 teaspoons crushed red pepper (optional\, more or less according to spice level preference)\n2 teaspoon kosher salt \n1 teaspoon black pepper\n30 oz. canned diced tomatoes (preferably fire roasted)\n1 cup red wine (optional)\n12 cups chicken broth (or vegetable broth)\n2 cups rice (any kind; see notes)\nGarnish: Romano or Parmesan cheese\, crushed red pepper\, and/or chopped parsley/herbs (optional)\n\nInstructions\n\n\nMelt half the butter in a large heavy pot or Dutch oven over medium-high heat. Add the diced onions and sauté for about 5 minutes\, until softened and starting to brown. Add the ground beef or turkey and minced garlic and brown the beef or turkey\, breaking apart with a wooden spoon as needed until fully cooked.\nAdd the cabbage to the pot\, and stir to coat. Let the cabbage soften up a bit for a couple of minutes\, stirring occasionally.\nAdd the chopped fresh parsley\, dried oregano\, dried mint\, crushed red pepper\, kosher salt\, black pepper\, canned diced tomatoes\, and red wine. Stir together\, then pour in the broth and bring to a boil.\nOnce the soup is boiling\, stir in the rice. Turn the heat to low\, cover\, and simmer for approximately 30 minutes\, or until the rice is fully cooked (this may take less time depending on the kind of rice you use).\nTurn off the heat. Add the remaining butter to the pot and stir in until it’s melted. Taste and adjust seasoning if necessary. If the soup is too thick\, you can add more water or broth until it’s thinned to your liking.\nServe\, topped with Romano or parmesan cheese\, crushed red pepper\, and/or more herbs if desired.\n\nNotes\n\n\nItalian seasoning may be used in place of the herbs and spices in this soup.\nI usually recommend converted (parboiled) rice in soups\, such as Ben’s Original. The reason for this is that it’s less starchy\, and it holds its shape more when submerged in liquid for a long time. This makes it easy to freeze and store leftovers without needing to cook the rice separately so it doesn’t turn mushy. SUMMARY:Make Greek Lemon Chicken and Gnocchi Soup to Share With Others
DESCRIPTION:Join KindChef Deb to make a Greek Lemon Chicken and Gnocchi Soup (based on this recipe from New York Times). After completing your soup\, freeze and label it for donation\, then drop off at one of our participating food assistance providers\, with a person or family that is in your heart\, or anyplace that you prefer\, when convenient. Finally\, report on where you shared your KindSoup and spread the word: Post a picture or two of you and your soups on social media with #DoKindWorks and tag us @DoKindWorks. \nConnect to Zoom event \n\n\nGreek Lemon Chicken and Gnocchi Soup\n\n\n\nIngredients\n\n6 quarts chicken stock\n9 cups torn rotisserie chicken (or other cooked chicken)\n9 medium lemons\nSalt and black pepper\, to taste\n3 pounds shelf-stable or refrigerated gnocchi\n6 eggs (well beaten)\n12 garlic cloves\, grated\nFresh dill (optional)\, for garnish\n\nInstructions\n\n\nTo a large pot over high\, add the chicken stock\, torn chicken and grated lemon zest (from about 3 lemons). Add a 1/4 teaspoon of salt (remember\, you are seasoning a lot of liquid!) and a 1/2 teaspoon of black pepper and bring to a boil over high. Reduce the heat to medium and simmer for 2 minutes.\nAdd the gnocchi to the soup and continue simmering for 3 minutes.\nMeanwhile\, squeeze enough lemon juice into a heatproof liquid measuring cup to get 1 ½ cups juice. Add the well beaten eggs and the garlic to the juice and whisk well to combine.\nWhile constantly whisking\, slowly stream 2 cups of the simmering chicken stock into the egg mixture to temper the eggs. Add the tempered egg mixture to the pot all at once and stir to combine. Turn the heat off right after incorporating the eggs. Taste and season with more salt as needed.\nServe with additional lemon zest on top\, freshly cracked black pepper and dill\, if using.\n\n\n\nHealth and Safety Information\nIn order to protect the the quality of our KindSoup program\, we ask that volunteers conscientiously observe the following guidelines: \n\nStart with clean hands and wash again frequently as needed throughout the cooking process.\nStart with clean kitchen surfaces and utensils (antibacterial wipes do a great job).\nKeep longer hair tied back.\nFollow other common sense procedures\, such as never returning a tasting spoon to the pot!\n\nThank you for maintaining a high cleanliness standard for our KindSoup donations! \nHow to Donate Your KindSoup\nSeal containers with a tight lid and freeze.
